Probiotic Potato Salad

It's finally potato season here in Central Texas, and I was determined to "real food" the version of potato salad I grew up with and love the most.  I'd call this the "pigs can fly" version of potato salad a la Northeast Texas.

For one, this version of potato salad contains NO MAYO.  Honestly, I've got nothing against mayo, but I don't usually make it myself, and bottled mayonnaise almost always contains soybean or canola oil (which usually contain GMOs and always have a negative impact on your omega 6:3 ratio). 

Not only does this potato salad not contain mayonnaise, it also contains TWO probiotic ingredients.  These are good for your digestive health, which is linked to having a better-functioning immune system.

So here you go - y'all enjoy!  My husband says it's the best he's ever had.  He lives with me, so pardon if you disagree.  :)





PROBIOTIC POTATO SALAD

1 lb new potatoes (honestly any old kind will do, that is what came in my box)
3 hardboiled, pastured eggs, chopped in egg slicer
1 1/2 T. fermented dill pickle relish, like Buppies brand or homemade or regular (use regular dill pickle relish if you don't have fermented)
1/3-1/2 cup plain whole milk yogurt
1 1/2 t. yellow mustard
1/2 t. ground celery seed
1/2 - 1 t. real salt
1 t. fresh ground pepper

Dice potatoes into 1/2" cubes.  Cover with filtered water, bring to boil, and cook 10-15 minutes until "al dente" (that means soft, but not so soft that they turn to mush!).  Drain and cool while prepping other ingredients.  In a mixing bowl, combine diced hardboiled egg, dill pickle relish, yogurt, mustard, and spices.  Gently fold in the potatoes.  Retaste for salt and add more if it needs it. 

There are a couple modifications you can make according to your preference. If you'd like to peel the potatoes or use a different type of potato, live it up! If you don't have fermented relish available, it will be equally delicious with regular dill pickle relish. If you can't find dill pickle relish at all, mince some dill pickles! This potato salad must have the pickles, or it ain't from Northeast Texas, y'all.

Enjoy with some locally made sausage and sauerkraut.  Or Franklin's BBQ.  It's also delicious with a side of cold watermelon.  :)

  1. We had the tonight and Clay loved it! No probiotic pickles, haven't tried making those yet, but dill relish was great in it! Ate it with some smoked chicken from Whole Foods. Thanks Jill!
