(5 minute!) Cinnamon Macadamia Nut Butter - aka Paleo Ice Cream

Funny how only a little over a year ago, I started this blog - I was rethinking food and thinking REAL FOOD was the way to go.  I definitely still believe that with all my heart, but recently I've had to undergo serious dietary restrictions in order to try to heal my (inflamed, overly sensitive, intolerant) body.  I was already strictly gluten free, but suddenly I needed to give up all dairy, caffeine, grains, and nightshades (tomatoes, potatoes, peppers, and eggplant). 

I will have to post later on the WHY to all that.  The important part here is that without any chocolate or ice cream, I needed a go-to treat. 

This cinnamon macadamia nut butter hits the spot so well, I dub it my "ice cream."  I confess to going through at least 3 batches of this recipe in the last month (and though my husband helped, it was mostly me).  You don't need much per sitting to satisfy the "treat" craving, and macadamia nuts are so nutritious and one of the most easily digestible.

On top of that, it takes literally less than 5 minutes to put this together and only has 4 ingredients!!! 

Another tip: mix this in with a batch of Homemade Mommy's homemade chocolate, and you have got another seriously delicious, nourishing treat that you can feel good about feeding to your family.





CINNAMON MACADAMIA NUT BUTTER
5 minutes prep & cook

1 cup roasted salted macadamias
1/4 cup coconut oil (optional - if you're looking for a fat bomb like I am)
1 T. honey
1 T. cinnamon

Add all ingredients to a food processor or Vitamix.  Process until smooth to your taste - it will get completely creamy if you let it go long enough!

The mixture will be kind of runny at room temperature, like store bought almond butter, that you can use for dipping veggies or fruit.  I like to refrigerate mine, which gets it to a harder, cookie-dough like texture.  Serve it however you like it!

Making nut butter at home is so fast and easy and saves you from eating lesser quality oils in the store-bought brands!
